Grape Variety : 55% Marselan, 23% Syrah, 18% Cabernet Franc, 4% Cabernet Sauvignon
Length/Type of Fermentation :
The wine ferments partially on wild yeast (or indigenous yeast) in smaller size open fermentor. Manual cap plunging during fermentation process follow by extended period of post ferment maceration. After pressing, the wine is transfer to barrels for MLF.
Length/Type of Aging : 37% New French Oak (Combination of Medium & Heavy toast barrel) + 10% American Oak aging for up to 12 months. The wine did not undergo cold stability & only treated with course filter before bottle. Crystallize sediment may develop over time.
Alc : 14.7%vol
Tasting Note : Vibrant, dark cheery red in color. Black to blue fruits dominant on the nose back with lightly spice, star anise and vanilla character. Medium to full weight wine. On the palate it is dense yet refine with well textured tannins & fruits balance.
Sonata is an artisanal wine, using the existing grape varieties but made into a completely different style in comparing to current Grace Vineyard wines. Grapes de-stemmed manually, and fermented on wild yeast (or indigenous yeast) in small sized tank. Very limited production with around 1,300 - 6,000 bottles made in depending on each vintage.
