Length/Type of Fermentation :
The fruits is de-stem and lightly crush into a small open top fermentation tank & barrels. The wines fermented at fairly high temperature with routine manual cap plunging.
Length/Type of Aging : Combination of 25% new French oak barrels and 75 % 1st & 2nd use barrel. Total of 12 months spend in 400 liters barrel and the wines treated minimum prior to bottling.
Tasting Note :
Dark red with crimson hue. Red to dark berry fruits, chocolate cake (pastry alike), light earthiness characters shows through on the nose. Full strength palate with well polished tannin texture. Persistent finish.
Naming the series after his first granddaughter, Anastasya, our founder Mr. Chun-Keung Chan expressed his aspiration and commitment that his successors would continue to improve on this series of wine for years to come.
We intentionally make this series into all single-varietal wines, in order to express the character of each grape planted in our various vineyards in China.
Planted in Southern Italy 2,500 years ago, Aglianico often referred as "Barolo of South Italy". It's now being reborn in Grace Vineyard.
The vine was planted in 2006 in our Shanxi vineyard. Well Structured, in-depth with long finish. 3171 bottles were made from 2018 harvest.
