Vineyard Region : Shanxi & Ningxia

Grape Variety : 78% Cabernet Sauvignon, 22% Merlot

Length/Type of Fermentation : 

Alcoholic fermentation & MLF takes place in stainless steel tank.

Length/Type of Aging : 16-18 months in combination of 54% new French barrel, 40% 1 year old French barrel & 6% of 2 years old barrel.

 

Tasting Note : 

Colour : Deep crimson/purple of the wine foreshadow its rich, ripe character.

Nose : On the nose, berry's, black currants and violets compete with well defined sweet oak characters.

Palate : Complexity is all over the palate. At once, the fruits characters oak and that were indicated on the nose fill the mouth. The palate is long and the gently drying finish gained from the fermentation process tannins, suggests a wide variety of complimentary food.

 

 

"Grace Vineyard Deep Blue" is a very personal wine for Judy. When She began at Grace Vineyard at 24 years old, she felt as though she was trying to survive in a vast ocean. Instead of being discouraged by the challenge ahead of her, she was inspired and strengthened (and a bit terrified!). The Book Blue Ocean Strategy showed her that being an outsider could be a strength, not a weakness, and helped her chart a course that she has been on ever since and this wine is named in the book's honor.

 

In 2008, Grace Vineyard Deep Blue was available to in-flight services of Cathay Pacific Airways first class and business class.

Small portion of the fermented wine were undergo MLF in barrel. Length/Type of Aging : 80% New French oak & 20% one year old barrel for 18 months aging.   Tasting Note : Clear purple red. A welcoming cedar wood, black/red berries, spices and hint of graphite. On the palate, notes of incense and cassis also emerge. The texture is pretty velvety, medium to full weight. The wine now is showing good acidity and silky tannin, depths and texture.      about Grace Vineyard Special Edition of Chairman's Reserve 2012   This special edition of Chairman's Reserve is a collaboration with CHOY, a wine collection featuring quality boutique vineyards from around the world.   As the first Chinese vineyard to be featured in the CHOY collection, this special edition Chairman's Reserve showcases the finest wines produced at Grace Vineyard and was hand-picked from the personal collection of the vineyard's Chairman, Chan Chun Keung, with a limited release of 9,600 bottles.   The God of Fortune painting on the label is an original that dates back to the Qing dynasty, the painting is traditionally used to wish prosperity, luck and good fortune to family and friends. Chairman's Reserve 2012 is a blend of Cabernet Sauvignon (57%), Merlot (33%) and Cabernet Franc (10%).

Grace Vineyard Interval 2017   Vineyard Region : Ningxia Grape Variety : 90% Syrah, 10% Cabernet Sauvignon Length/Type of Fermentation :  Fruits source from our low yielding vineyards in Ningxia with average cropping level of 4.5 tons per hectare.  A rather dry and ripe vintage for our vineyards in Ningxia, yielding in the fruits with very high sugar & phenolic concentration.  The fruits were gently crushed and initial alcoholic fermentation conducted in small stainless steel tank with carefully watch over the extractions. Each partial of the fruits were fermented separately with different handling and extraction rate. Secondary fermentation (MLF) conducted in neutral oak barrel.  Length/Type of Aging : 14 months barrel aging in 225 & 400 Liters French oak. 60% New French Oak + 30% 1 year old oak + 10% 2 to 3 years old oak. Tasting Note :  Deep bright red in color with intense blackberry, perfume spice, star anise & back with toasty oak/ nutmeg aroma on the nose. The palate is delicately layered. It is dense with vibrant blue fruits, caramel toast and cocoa notes. The tannin are refine with good amount of acidity / sweetness balance.     Since 2012 we have been developing our vineyards in Ningxia. After patiently waiting, we are proud to launch the estate's first wine - Interval. Syrah based, Interval is a perfect companion to our Shanxi flagship wine - Deep Blue. Interval takes its name from the space between musical notes. We believe that if we only see what we're looking at, we can't actually see a whole subject clearly. It's the combination of visible and invisible that makes a beautiful thing complete.
