New Year Wine(丛中笑)
Vineyard Region : Shanxi & Ningxia Grape Variety : 50% Cabernet Sauvignon, 40% Merlot & 10% Shiraz Length/Type of Fermentation : 20% of the fruits undergo Carbonic maceration. The remainder undergo regular low temperature fermentation. Length/Type of Aging : Unoak / did not undergo extended period of oak age. Small portion of the fruits were complete fermentation in neutral barrel. The wine were handle lightly, without sulfur added during winemaking process.
Tasting Note : We combined the Cabernet Sauvignon from Shanxi with Merlot & Shiraz from Ningxia for this harvest to create this interesting wine. 20% of the Cabernet Sauvignon in the blend undergo Carbonic Maceration. The nose exhibit classic carbonic maceration notes of strawberry, bubble-gum alike character and hint of banana while having additional plum & spice note. On the palate it is dense yet fresh, packed with fruits sweetness, red currant & light blue-fruit note. The finish is long with bright acidity and silky tannin. A fun wine to drink over festive!
