Grape Variety : 100% Shiraz

Length/Type of Fermentation : 

We have been working with “Carbonic Maceration” fermentation method for this special wine for over 10 years now using mainly Cabernet Sauvignon. 
For this year, we change the method of making to a regular fermentation using Shiraz, one of our favorite variety. 
Zero sulfur added throughout the winemaking. Only minimum added prior at bottling. 

Length/Type of Aging : 

No oak aging, to reflect the pure characteristic of the vineyard and variety. 

Tasting Note : 

The Shiraz fruit source from our Ningxia vineyard which has the same vineyard profile as our flagship series --- “Interval”. The only variations are it was from a younger vines and planted under traditional Ningxia vineyard canopy system known as “Independent Long Stem Pruning” (独龙干整型修剪).

Upfront red to blue fruits note, black pepper, slightly tart & spicy tone. Fruitful mid palate, medium in texture with refine tannin. This wine has the similar primary fruit profile as the “Interval” but with less complexity & intensity. Without the presence of oak influence making this wine easier to approach and fruit focus. 
A rather pure vineyard reflection wine. Drinking well now but will certainly developed into a more refine characteristic over the next few years.

P/S: In the cellar, we called this wine “little Interval”.
