Length/Type of Fermentation :
The fruits gently crushed into stainless steel tanks with immediate introduction of yeast. The wine fermented on skin at fairly high temperature with total skin time of 7 days. The wine were then pressed prior to dryness and the fermentation completed in seasoned barrel over an extended period of time.
Length/Type of Aging : The wine spend approximately 3 months in seasoned barrel for MLF, follow by 12 months in 40% new french oak at 400 liters (butt) in size.
Tasting Note : Dark crimson hue. Up lifted nose with aroma profile of red to dark fruits, spices, touch of cinnamon, jam and pepper. On the palate, it is well structured with rich acidity back by generous amount of juiciness and fruits intensity.
Naming the series after his first granddaughter, Anastasya, our founder Mr. Chun-Keung Chan expressed his aspiration and commitment that his successors would continue to improve on this series of wine for years to come. We intentionally make this series into all single-varietal wines, in order to express the character of each grape planted in our various vineyards in China.
