New Year Wine（春心动）
Vineyard Region : Ningxia
Grape Variety : 95% Cabernet Sauvignon, 5% Merlot
Length/Type of Fermentation :
Portions of the fruits undergo Carbonic Maceration. Another proportion are de-stemmed and fermented in stainless steel tanks at relatively low temperature.
Length/Type of Aging : Approximately 20% of the wines undergo MLF in 225 liters used (neutral) barrel over 5 weeks. The remainder wine are unoak and completed MLF in stainless steel tanks.
Tasting Note :
The wines has dominant aroma of red fruits, spices, ripe capsicum & lightly ripe banana to strawberries characteristic (derive from Carbonic maceration). On the palate, the structure are firm-ish with good amount of tannins / sweetness balance.
We personally love to consume this wine within the next 6 to 12 months for the core freshness from the fruits, but it should further develop into a more interesting character under proper cellaring for another 1 to 2 years.
This wine treated minimum to keep the fruitiness, sedimentation may develop over time in bottle.
