New Year Wine（堂前燕）
Vineyard Region : Shanxi & Ningxia
Grape Variety : 90% Cabernet Sauvignon, 10% Merlot
Length/Type of Fermentation :
25% of the fruits undergo Carbonic Maceration, 75% de-stemmed and fermented in stainless steel tanks at relatively low temperature.
Length/Type of Aging : A portion of the wines undergo MLF in 225 liters used (neutral) barrel over 6 weeks. The remainder are unoak.
Tasting Note : We want it to be fresh, easy while having good flavor profile / structure as a “New Year Wine” for any occasions.
Again, this year we employed 25% of Carbonic maceration wine in the blend, which shows aroma of red fruits, spices & ripe banana character. The palate has good structure built from Cabernet Sauvignon & merlot with great amount of sweet fruits and spiciness.
This wine treated minimum to keep its freshness, sedimentation may develop over time in bottle.
Chinese New Year is a special time for us at Grace Vineyard, as we contemplate the snowy vineyards surrounded by the warmth of family and friends. In celebration and thanks, we want to let our friends join us in tasting the new vintage, almost like an invitation to a movie preview.
