Length/Type of Fermentation : 

We harvested the fruits earlier to maintain the natural acidity and freshness. The fruits were whole bunch pressed to minimize excessive flavors and color extractions, followed by alcoholic fermentation in stainless steel tank. The wines were lightly filtered prior to secondary fermentation in bottle based on traditional method.

Length/Type of Aging : Fermentation in stainless steel tank, followed by a minimum of 12 months aging on lees in the bottle prior to hand riddling and disgorgement.

Alc : 12.0%vol

Tasting Note : Light salmon pink. Cherry fruits with green bell pepper & almond. It is smooth on the palate with notes of herbs and refine hazelnut note.

She named this, Grace vineyard's first sparkling wine “Angelina” because it perfectly captures the joy and love of life that shines in little girls everywhere, but especially in her own sweet girl. Angelina sparkling wine is made in accordance with traditional method (second fermentation in bottle).
