Length/Type of Fermentation :

We harvested the fruits earlier to maintain the natural acidity and freshness. Alcoholic fermentation took place in stainless steel tank without undergo malolactic fermentation. The wine was lightly filtered prior to secondary fermentation in bottle based on traditional method.

Length/Type of Aging : Fermentation in stainless steel tank, followed by a minimum of 12 months aging on lees in the bottle prior to hand riddling and disgorgement.

Alc : 11.5%vol

Tasting Note : Pale green with hint of straw. Fresh stone fruit, lime and green apple flavors. On the palate, it is crisp, with a touch of freshly baked bread notes and light creamy texture. Other than enjoy by itself, the refreshing acidity makes this wine an ideal companion with seafood.
