2015 has been an interesting year for our vines. Lots of challenges from the natural but the end seasons towards the harvest were rather stable. The vineyard for this Chardonnay are “dry-farmed”, yielding in naturally smaller size berries & highly flavor concentrated. It was carefully hand picked, whole cluster press with minimum handling to protect the full flavour profile from the vineyard.
Length/Type of Fermentation :
The fruits were 100% whole bunch pressed and ferment in 400 liters cask origin from the forest of Vosges.
Length/Type of Aging :
70% New French oak (400 Liters) aging for 10 months with constant lees strring. Small proportion of wine undergo MLF.
The wine spend over 5 years in our cellar after bottling to allows it to develop & come together further before we release them.
Bottle under DIAM 10 cork to ensure taint free & consistency.
Alc : 13.0%vol

Bright pale straw in color with yellow tint.
The 2015 Chardonnay is an elegant wine that balances with complex aromas of tropical fruits notes, zesty citrus, stone fruits, cashew and pear. The oak component plays an important role offering a good spicy hint & mineral texture.
Elegant palate, delicate lemon tart, nuts and white peach flavours complimented with a balance acidity. Long finish.

In a world dominated by red grapes, we aspire to craft a world-class level white wine. After experimenting with the cultivation and vinification of various grape varieties, we ultimately chose Chardonnay. We employed a dry farming method, resulting in small berries with a richer flavor profile. All grapes were whole-cluster pressed and fermented in 400-liter oak barrels.
Chairman’s Reserve chardonnay 2015 is blend of Chardonnay (100%), The annual output is 1150 bottles.
