Grape Variety : 100% Chardonnay

Vintage : A rather cold 2021 vintage for our Chardonnay. Bright, clean and natural acidity are some key note from this harvest.

Length/Type of Fermentation : Whole cluster pressed and ferment in the combination of 400 liters, 225 liters barrel & concrete eggs. Only light to mild pressure juice were used for our Tasya's Reserve Chardonnay.
The winemaking process were handle oxidatively to encourage more exhibit fruits profile and color stability. Only a small amount of Sulfur dioxide were added during bottling.

Length/Type of Aging : Combination of 25% New French oak + traditional concrete aging and stay on lees for over 10 month. A small proportion of the wine undergo natural MLF to add texture to this wine.

Alc : 13.0%vol

Tasting Note : Bright pale straw in color.
Tropical fruits (banana & ripe pineapple) with citrus notes on the nose. Lightly oaked profile from the barrel fermentation at the back ground rather than dominate the wine, flavor as in spices, toast and caramel.
The palate texture are fruit full, touch of creaminess and back with bright acidity. Lengthy finish with almond notes.

Naming the series after his first granddaughter, Anastasya, our founder Mr. Chun-Keung Chan expressed his aspiration and commitment that his successors would continue to improve on this series of wine for years to come.

We intentionally make this series into all single-varietal wines, in order to express the character of each grape planted in our various vineyards in China.
