Grace Vineyard Sonata Series 2021 - The Origin ( Cabernet Sauvignon, Merlot, Marselan )
Vineyard Region : Shanxi & Ningxia Grape Variety : 55% Cabernet Sauvignon, 30% Merlot, 15% Marselan Length/Type of Fermentation : Sonata series, known as our Wine Making Trial ever since vintage 2008. The idea behind this wine is to source for potential wine styles & winemaking techniques that we could craft from our vineyards. Ever since the beginning, this wine has been ferment under natural yeast while handled minimum, unfiltered with minimum sulfur usage at bottling. The target is to let the fruits (or vineyards) shine through rather than too much human interference. After years of successful work in this wine, we begin into incorporate the winemaking techniques to other series of Grace Vineyard wines. To name a few: partially spontaneous fermentation application in Deep Blue, tasya’s reserve & usage of concrete in aging red wine. Length/Type of Aging : 20 months in total on 50% New French & American Oak+ 35% 1 year old oak + 15% concrete. The wine did not undergo cold stability and filtration. Crystallize sediment may develop over time. Alc : 15.5%vol Tasting Note : Vibrant, dark cheery red in color. Black to blue fruits dominant on the nose, with light touch of “black inks” characteristic on the nose. We often see this character when the vintage is in balance with ideal fruit ripeness. Full weight palate with bright fruits profile reinforce. The concrete age component of Merlot let the fruits shines through, while balancing the oak characteristic. Generous length.

Sonata is an artisanal wine, using the existing grape varieties but made into a completely different style in comparing to current Grace Vineyard wines. Grapes de-stemmed manually, and fermented on wild yeast (or indigenous yeast) in small sized tank. Very limited production with around 1,300 - 6,000 bottles made in depending on each vintage.
