Vineyard Region : Ningxia Grape Variety : 100% Merlot Length/Type of Fermentation : The fruits is de-stem and lightly crush into stainless steel tank. Fermentation take place at relatively low temperature with extended time on skin. Follow by MLF in Neutral barrel. Length/Type of Aging : 40% New French oak barrels aging for 15 months. 20% of the wine was aged for 12 months in egg concrete tanks. The wines were carefully rack & lightly filter prior to bottling to maintained the full flavor profile. Alc : 15.5%vol Tasting Note : Deep red with crimson edges. Full-bodied with a medium structure, offering a sweet and juicy profile. Flavors of chocolate and white pepper blend harmoniously with refined tannins and balanced acidity, persistent finish.

Naming the series after his first granddaughter, Anastasya, our founder Mr. Chun-Keung Chan expressed his aspiration and commitment that his successors would continue to improve on this series of wine for years to come. We intentionally make this series into all single-varietal wines, in order to express the character of each grape planted in our various vineyards in China.
